Anyone care to explain what's the difference between the choice of three maths subjects in STPM (Maths S, Maths T, Maths T Further)?

Well, these names might have confused you. Basically, I believe the "T" and "S" represent a Malay term. When the medium of instruction is changed to English, MPM http://www.mpm.edu.my/ did not translate the subject name into English. Basically "T" means tulen while "S" means statistik. This is how these subjects are named.

So what is the difference between both Math T and Math S? Well, for the first year (Lower Six), the material covered is pretty much the same, i.e. the heckneyed Algebra, Coordinate Geometry, Calculus and etc. But for the Upper Six syllabus, both differ. As the name suggest, Math S will focus on statistics, whereas Math T will discuss pure math in depth.

Math T Further, or rather Further Math (Matematik Lanjutan) is a course that deals with the core pure math with much details. More commitment is assumed for FM candidates. For people who love math, FM is the place where you expose yourself to proofs and more abstract concepts. For example, you will study polynomials in depth, without confining yourself to 2 variables. Moreover, you will learn mathematical induction (an important tool in math) and some linear algebra. FM candidates usually have no problem when they are in the university as FM constructs a very strong foundation in mathematics.

If I'm not wrong, there are no text books for Further Mathematics T right?

So, how do we know what should we study? :?

only some schools teach Further Maths. AFAIK, there are VERY little candidates taking it every year. You'll have to rely on getting a good lecturer/enroll in a good school offering the course.

do we need to do practical in those maths subjects?

to save time , i just ask here, which subject do we need to do practical like PEKA for spm?

No practical for Maths...

Only the three core science subjects, Bio, Chem & Physics have practicals..
