View Full Version : Recipe for Kuih Talam

INGREDIENTS

For Green Layer:
300g rice flour (soak in 600ml water)
180g sago flour (soak in 600ml water)
1 kg sugar
500ml pandan (screwpine) juice extracted from 1 bunch pandan leaves

For Creamy White Layer:
Coconut milk strained from 600g grated coconut & 400ml water
1/2 tsp salt
100g rice flour

To prepare green layer:
Mix all ingredients and cook over slow fire
Stir all the time until batter becomes translucent
Pour mixture into a wet metal tray (talam) and steam for about 30 minutes
Remove any water from pan cover every 15 minutes

To prepare creamy white layer:
Mix coconut milk, salt and rice flour
Stir well & cook over slow fire until thick
Pour mixture over green layer and steam for 6 minutes
Remove any water from pan cover and steam for another 6 minutes

To serve:
Cool completely before serving
Cut into diamond shapes

any ideas how to get the ingredients, especially pandan leaves/extract, in the US?

you can usually get the pandan leaves at an asian grocery store. i found them the other day near my place (ann arbor).

hey, this kuih talam thing is quite hard to make. i did try it once (back in malaysia). instead of getting complimentary, i got an hour of lecture from my mum. guyz, make sure u make this rcipe without the parents knowledge....eheheheh
